Chickpea, Spinach and Tomato Curry
An exceptionally easy and tasty curry, that can be eaten alone or served with rice or a gluten-free flatbread.

- 1 red onion
- 1 tbsp of coconut oil
- 2 cloves of garlic
- 1 tsp of freshly grated ginger
- 1/2 red chilli
- 1 can of organic chickpeas
- 1 large bag of organic spinach leaves
- 6 cherry tomatoes or 3 medium tomatoes
- sea salt and pepper
Finely chop the onions, garlic, ginger and chillies. Fry in a little coconut oil for a few minutes, then add the turmeric and garam masala and mix well.
Drain and rinse the chickpeas and add to the pot. Add the tomatoes and give it all a good stir. After about 5 minutes add the spinach. It will quickly wilt and combine nicely with the other ingredients.
Add sea salt and pepper to taste, and it's ready to serve!
