Courgette, Pea and Mint Soup

A delicious, creamy soup that can be made very quickly and easily.

The taste of the mint is very subtle but just lightens up the flavour beautifully.  This bowl makes a quick lunch or tempting starter.

Ingredients

  • 1 red onion
  • 1 carrot
  • 1 stick of celery
  • 1 tbsp of extra virgin olive oil
  • 2 cloves of garlic
  • 1 tsp of freshly grated ginger
  • 1 tsp of chillies
  • 4 medium courgettes
  • 100g frozen peas
  • 2 tbsp fresh chopped mint
  • 200ml of water with 2 tsp miso paste or vegetable stock
  • sea salt and black pepper to taste

Finely chop the onions, carrots and celery (or for a speedy option you can buy a ready chopped 'soffritto' or 'mirepoix' mix and the job is done). Heat the olive oil in a large pot and sauté with a pinch of salt for a few minutes until golden. Add the garlic, ginger and chilli and sauté for another couple of minutes. (Another cheat here is to buy pre-chopped frozen spices and simply spoon them into the mix.)

While this is cooking, chop up the courgettes then throw them in to the pot, along with the frozen peas. Give it all a good stir then pour over the miso and hot water or veggie stock. Simmer for about 10 minutes then add the mint and blend until smooth.

Top with freshly chopped mint, some black pepper and a dash of omega oil, and enjoy right away.
